The Sides Have It

It’s easy to come up with a protein for dinner. Fish. Poultry. Beef. Pork. Lamb. Pick one and you’re good to go. They’re easy to prepare. And they don’t require a lot of extra carbs to make them taste terrific.

Side dishes are a whole other story. Especially a side dish that doesn’t blow my carb allowance. I’m sorry to say my defaults are salad, raw veggies, or a minuscule portion of pasta. Let’s face it. I’m not winning any awards with these tired choices.

So – I decided to see what 15-Minute Diabetic Meals by Nancy S. Hughes had for us. With only four main ingredients per recipe, it’s not as though it would be an overwhelming task to prepare anything in the book. I found several sides and salads with 1-5 carbs and many more with 6-10 carbs. I’m going to list them here so you can try them for yourself. Let us know what you think!
